Although not really Tuscany related, the traditional Bolognese sauce, also known as Ragu alla Bolognese, originates from the city of Bologna in Italy. The original recipe has evolved over time, but the following is a version that stays true to its roots:

Ingredients:

  • 1 tablespoon olive oil

  • 1 tablespoon butter

  • 1 onion, finely chopped

  • 2 carrots, finely chopped

  • 2 celery stalks, finely chopped

  • 1 clove garlic, minced

  • 100g pancetta, finely chopped (optional)

  • 400g ground beef (traditionally a mix of beef and pork, but you can use only beef if you prefer)

  • 200ml dry red wine

  • 150ml whole milk

  • 400g canned Italian plum tomatoes, pureed

  • Salt and pepper, to taste

  • A pinch of freshly grated nutmeg

  • Fresh basil leaves, to garnish

  • Freshly grated Parmigiano-Reggiano cheese, to serve

Instructions:

  1. Heat the olive oil and butter in a large, heavy-bottomed pan over medium heat. Once the butter has melted, add the chopped onion, carrots, and celery. Cook for about 10 minutes, stirring occasionally until the vegetables are softened.

  2. Add the minced garlic and pancetta (if using) and cook for 2-3 minutes, stirring frequently.

  3. Add the ground beef to the pan, breaking it up with a wooden spoon. Cook until browned, about 10 minutes.

  4. Pour in the red wine, and let it simmer until it has mostly evaporated, about 5 minutes.

  5. Stir in the milk and let it simmer for another 5 minutes, until it has mostly been absorbed by the meat.

  6. Add the pureed tomatoes, salt, pepper, and a pinch of nutmeg. Stir well to combine all the ingredients.

  7. Lower the heat and let the sauce simmer gently, partially covered, for at least 2 hours. The longer it simmers, the richer and more flavorful the sauce becomes. Be sure to stir occasionally, and add a little water if the sauce becomes too thick.

  8. Taste the sauce and adjust the seasoning as needed.

  9. Serve the Bolognese sauce over freshly cooked pasta, traditionally tagliatelle. Garnish with fresh basil leaves and a generous amount of freshly grated Parmigiano-Reggiano cheese.
